As part of Geoff's birthday fiesta I made this yummy black bean and corn salsa.  It was a great addition to the meal and a yummy snack for later.  Even the little man LOVED it.

What you’ll need:
1 – 15 oz. can of yellow corn, drained
2 – 2 large ripe tomatoes, diced
3 – 15 oz. can of black beans, drained and rinsed
4 – 1/4 cup of diced red onions
5 – 1 garlic glove, minced
6 – 1 ripe avocado, diced
7 – 2 Tablespoons chopped fresh cilantro
8 – 2 Tablespoons lime juice
9 – 1 teaspoon salt, to taste
10 – 1 jalapeno pepper, seeded and minced (optional)

What you’ll do:
Gently combine all ingredients in a large bowl.  Cover and refrigerate.  Enjoy!

  1. Um that looks yummy! It's my first time here. I'm visiting from WIWW. I came to see your outfit (simple and classically stylish, great!) but I got distracted by the beautiful photos of food. Yum!!!! We've got some good tomatoes growing in our garden, avocado n the counter, corn in the freezer, and beans begging to be soaked. Hurray for a recipe I can finally make!
