Life is beginning to slow down and fully resume from our move only a month and half ago (can I still use that as my excuse for unproductivity?! I hope so, because I may still be using it a year from now!). I have been wanting to bake some yummy treats to take around to our new neighbors, but … life! It just goes way too fast and sometimes the “normal,” day-to-day tasks just seem to get in the way.

The temperatures took a plunge the past couple of days and I am completely okay with it! I finally pulled out all my sweaters, long pants and boots and am loving layering up these days (minus the extra time it puts on the already lengthy time it takes to get the kids and I out of the house!). It seems all the stores have Fall d├ęcor everywhere and Pinterest is going crazy with yummy, warm treats. I decided to try one of those new, yummy treats on my neighbors!!

Pumpkin snickerdoodles with a cream cheese filling. Yes, you read that correctly. Pumpkin by itself is yummy. Snickerdoodles by itself is also yummy. And, cream cheese… you get it. Add them all together and it a glorious treat that melts in your mouth. I don’t think I have ever made a cookie that is more moist than these. They are amazing and by a divine miracle they made it to our neighbors before being devoured by our entire family.

Pumpkin Snickerdoodles with Cream Cheese Filling

Cookie Ingredients:

  1. 3 3/4 cups of flour
  2. 1 1/2 teaspoon baking powder
  3. 1/2 teaspoon ground cinnamon
  4. 1/2 teaspoon salt
  5. 1/8 teaspoon nutmeg
  6. 1 cup butter, softened to room temperature
  7. 1 cup granulated sugar
  8. 1/2 cup brown sugar
  9. 1 cup pumpkin puree (canned pumpkin)
  10. 1 egg
  11. 2 teaspoons vanilla extract

Cream Cheese Filling Ingredients:

  1. 8 ounces cream cheese, softened to room temperature
  2. 1 cup granulated sugar
  3. 2 teaspoons vanilla extract

Cinnamon Sugar Coating Ingredients:

  1. 1/4 cup granulated sugar
  2. 1/2 teaspoon ground cinnamon
  3. 1/8 teaspoon ground ginger

Recipe Instructions:

  1. In a medium bowl, combine the flour, baking powder, 1/2 teaspoon of cinnamon, salt and nutmeg and whisk to blend. Set aside.
  2. Beat together the butter and sugars until light and fluffy, approximately 2 minutes.
  3. Blend in the pumpkin puree, egg and vanilla one at a time until fully incorporated.
  4. With mixer on low, add the dry ingredients until well blended.
  5. Cover and chill the dough for at least one hour (I did mine over 2 hours and it was perfect!).
  6. To make the filling, combine the cream cheese, sugar and vanilla with an electric mixer until well blended.
  7. Cover and chill the filling for at least one hour (again, I did mine over 2hours and it was perfect).
  8. Preheat the over to 350 degrees Fahrenheit and line baking sheets with parchment paper.
  9. To make the coating, combine the sugar, 1/2 teaspoon cinnamon and ginger and whisk to blend.
  10. Remove the cookie dough and filling from the refrigerator.
  11. To make the cookies, take approximately a tablespoon of cookie batter and flatten it like a pancake. Place a heaping teaspoon of cream cheese filling in center of flattened cookie dough. Form another tablespoon of cookie batter and flatten like a pancake and place on top of the cream cheese filling. Pinch the edges of the two cookies together to seal the filling. Roll the dough in a ball and then roll in the cinnamon sugar coating. Place on the prepared baking sheet.
  12. Repeat step 11 until all the dough is used.
  13. Bake the cookies approximately 12 minutes or until the tops begin to crack (literally just when they begin to crack … they will be sooo moist!).
  14. Let the cookies cool on baking sheet for 5 minutes and then transfer to a wire rack.
  15. Enjoy!

My little taste-tester gave me the “okay” for the cookies… but not the passing them off to the neighbors. He lost that battle.
